Weird top menu issue plus styling text

I am trying to build my first site and having a few teething troubles. I am sure I will get used to it.

Somehow I've ended up with two menus at the top. I only want the top one of those as displaying it twice doesn't look too good :-) And I just want it to be static on every page on the site, ie. global. How do I get rid of the second menu?

Secondly, I have some text below the graphic, which starts 'Do you have an idea that'. I want to increase the paragraph spacing as at the moment there is no difference between a line and a paragraph. I want to do this so that it becomes the default paragraph style. How do I do that?
