"an error happened while trying to display this element" when I try and edit or add any element that isn't just text

Hi, for the last few days, when I try to add any element (non text, images, bullet list etc.) I get the " an error happened while trying to display this element" error.  I have confirmed I'm on version 2.6.8 and there are no plugins or themes that are not up to date.  It's basically every element, either any new one that I try to add, or existing one that I attempt to edit.
