Display single reference field value of custom asset

I am creating a movie site that will list movie session time and location (i.e. cinema) for a given movie.

I want to record which State (of Australia) the cinema is in. So I've created a Custom Asset for State, which will be a single reference for each Cinema.

I've then created a Custom Asset for Cinema. In the Cinema custom asset I have a Single Reference field for State. When I create a Cinema, I choose which State it is in.

However when I go to the Builder and try to bring in the dynamic content, I can bring in the Cinema Title as well as other meta fields (e.g. date / time created) but State is not available to select for display.

What have I missed? How do I display the single reference value for State?

I have read a number of pages in the help / support site, including the "Similar posts" listed above. I've watched this video: https://jmp.sh/yH64tUvZ but although it shows how to link one or multiple references, it does not show how to display them or how to search on them.

PS I understand that I can create State as a Select List, and there is no problem displaying that as dynamic data. However I don't see that as a solution. For instance, while we only have 8 states and territories, when I come to the same issue for Movies referencing Cinemas, there will be hundreds of ciinemas and it will not be practical to use a Select List.
